CHEF JOHN LAWSON

John Lawson is a renowned British chef celebrated for his high-end, health-focused cuisine and his philosophy of food as medicine. Trained in some of the world’s most respected kitchens, including under Gordon Ramsay and Raymond Blanc, John built an international career working across Michelin-starred restaurants in France, the UK, the United States, and Australia.

A graduate of Westminster Kingsway and trained for three years at the legendary Le Manoir aux Quat’ Saisons, he went on to serve as executive chef and partner of No. 8 at Crown Melbourne. During this time, he cooked for the exclusive private boxes at the Australian Open in 2014 and 2015, delivering refined culinary experiences at one of the world’s most prestigious sporting events. He also worked as a private chef for high-profile clients, including the Sultan of Oman and David Beckham.  His culinary work has earned international recognition, including a Chef Hat award, Moët & Chandon Executive Chef finalist honors, and a Michelin Plate distinction.

In 2015, John’s life took a profound turn following a brain tumor diagnosis that resulted in a seizure and temporary paralysis. His recovery journey reshaped his relationship with food and health. Through extensive rehabilitation, he began exploring how nutrition directly impacts healing, leading him to transform his cooking approach toward natural, whole foods designed to support gut and brain function.

This philosophy became the foundation of FOOD by John Lawson in Leigh-on-Sea, Essex — a restaurant dedicated to organic, locally sourced ingredients that promote vitality and neurological wellbeing. Today, the restaurant continues under the care of a close friend who preserves and honors John’s original vision, nurturing the concept with the same passion and integrity with which it was created.

Now based in Mexico with his new family, John is entering a new chapter of exploration and creativity. His cuisine remains intentionally free from gluten, dairy, and refined sugars, proving that healing food can also be deeply flavorful and refined. Beyond the kitchen, he works as a disease-preventative coach, educating others about the gut–brain axis and the power of conscious nutrition.

Through ALEMENTO, John brings his experience, resilience, and philosophy into intimate culinary experiences that nourish both body and spirit.

ALE MORÁN 

Alejandra Morán is a professional architect and Feng Shui consultant whose work bridges design, energy, and conscious living. Her architectural practice is rooted in the belief that spaces influence wellbeing, and her evolution into Feng Shui architecture reflects a deeper exploration of harmony between environment, body, and spirit.

 

Through ALEMENTO, Alejandra brings love, structure, aesthetic sensitivity, and intentional design into every experience — from the atmosphere of the table to the flow of each gathering.

Her journey towards a conscious life was deeply marked by the love and the inspiration from life experience of Chef John Lawson.

ALEMENTO is a culinary traveling concept shaped by exploration, culture, and seasonal living. We move between places that inspire our work and nourish our philosophy.

While México is our primary base — where we spend most seasons developing experiences and welcoming guests — ALEMENTO also lives internationally through our journeys to India and London.

​

These three places form the rhythm of our practice. Each country influences our cuisine, our rituals, and our perspective: México offers abundance and connection to the land, India deepens our relationship with spirituality and ancient food wisdom, and London connects us to a global culinary dialogue.

ALEMENTO exists in motion — a living project that grows through travel, culture, and the people we meet along the way.
